What You’ll Need for Ingredients
Scallops: There are two main types of scallops commonly used in cooking: sea scallops and bay scallops. Sea scallops are the large, premium scallops typically used for seared or bacon-wrapped dishes in restaurants. The scallops shown here are U10 scallops, meaning there are fewer than 10 per pound – nice, big scallops ideal for wrapping in bacon! While more affordable, bay scallops are too small and are usually used in chowders or seafood pasta dishes. This recipe calls specifically for sea scallops!
Bacon: Use your favorite bacon to wrap around the scallops! Regular-cut bacon works wonderfully, and it cooks evenly without overpowering the scallops. Karlynn’s Tip: Try flavored varieties like maple, applewood-smoked, or peppered bacon to add an extra layer of smoky, savory goodness.

Seasonings: Flaked sea salt, ground black pepper, and dried parsley flakes are a go-to seafood seasoning that enhances the scallops and adds a subtle pop of color! Karlynn’s Tip: Finish with a light sprinkle of flaky salt after baking to really make the scallops shine!
Butter: Salted butter forms the base of the delicious garlic butter sauce, adding richness and enhancing the natural sweetness of the scallops.
Minced Garlic: It wouldn’t be garlic butter without garlic! Fresh minced garlic adds a bold, savory flavor that perfectly complements both the bacon and the scallops. Karlynn’s Tip: Fresh garlic brings out the strongest taste, but jarred garlic works well if that’s what you have on hand!
How To Make Bacon Wrapped Scallops

- Preheat your oven to 425°F.
- Pat the scallops dry, blotting as much moisture as possible.
- Place the bacon on a microwave-safe plate and cook for 3-4 minutes, until the fat starts to cook out.
- Wrap each scallop in bacon, using one slice per large scallop, or half a piece for smaller ones.
- Secure the bacon around each scallop with a toothpick or bamboo skewer pushed through the middle.
- Arrange the scallops on a large baking sheet with space between them.
- Combine the sauce ingredients, brush it on top of each scallop, and leave some minced garlic on top.
- Sprinkle with cracked pepper and a bit of sea salt, then bake for 15-17 minutes, depending on the size of the scallops. You’ll know they’re ready when they reach a safe internal temperature of 125-130°F.
- Remove and serve with the toothpick still inserted in each scallop, letting each person remove it themselves.

Storage Instructions
Bacon Wrapped Scallops are best enjoyed fresh for the perfect texture, but leftovers can still make a delicious next-day appetizer or light meal!
Refrigerator: Store any leftover scallops in an airtight container once completely cooled for up to 2 days. Reheat gently in the oven at a low temperature or in a skillet over medium-low heat until just warmed through. Avoid microwaving if possible, as it can make the scallops rubbery!
Freezer: Cooked scallops can be frozen, though their texture may change slightly after thawing. For the best results, place your cooled scallops in a single layer on a baking sheet and freeze until solid. Then, transfer them to a freezer-safe container or an airtight bag and freeze for up to 3 months, following USDA food safety guidelines. Thaw overnight in the refrigerator and reheat gently before serving.

Bacon Wrapped Scallops
Ingredients
- 12-14 large sea scallops
- 12-14 slices bacon
- toothpicks or small skewers
Garlic Butter Sauce
- ¼ cup salted butter, melted
- 1 tablespoon minced garlic
- 2 teaspoon dried parsley flakes
- freshly ground black pepper
- flaked sea salt
Instructions
- Preheat your oven to 425°F. Place the toothpicks/skewers in a bowl and pour boiling hot water over them and let them soak while you prepare the scallops.
- Pat the scallops dry with a paper towel.
- Place the bacon on a microwave-safe plate and cook for 3-4 minutes, until the fat starts to render and cook out. This will help make the bacon crisp by the time you are done baking them in the oven. IF you want very crispy bacon, precook it a lot!
- Wrap a scallop in a slice of bacon around the edges then secure with a toothpick. Repeat with remaining scallops.,
- Arrange the scallops in a single layer on a large baking sheet with space between each one.
- Combine the garlic butter sauce and brush/drizzle over all of the scallops on the baking sheet, making sure that each scallop has minced garlic on top.
- Bake 15-17 minutes until the scallops are 125/130°, are tender and opaque and the bacon is cooked through. Serve hot.

I’ve tried bacon wrapped scallops a couple times. Now, I have decided to leave it to the experts. Both times the scallops were done long before the bacon. Maybe I should try one more time but pre cook the bacon to the halfway point before I wrap around the scallops.

Haven’t tasted them yet, but I should have known better. Butter and garlic at 425° for 15 minutes…? My entire house is filled with smoke. I would suggest maybe brushing the garlic butter on for the last two minutes of baking.
