Chicken Cornbread Casserole
This Chicken Cornbread Casserole recipe actually comes from my daughter Kellie who’s also an aspiring cook, too! She made this last night and it was a HUGE hit in the house..! This is ‘comfort food’ at its finest…
  • Serving Size: Serves 6 large portions
  • Cook Time: About 45 minutes
  • Prep Time: About 15 minutes

Ingredients

2 Boxes of cornbread stuffing
1 8 oz can of cut corn (drained)
1/2 cup of chopped onion
1/2 cup celery
1/3 cup of peas
1/3 cup of baby carrots (chopped)
2 cans of precooked chicken (or take the long route and crock pot your own chicken and shred it)
1 can of Pillsbury rolls
1/4 teaspoon of Basil
1/4 teaspoon of Parsley
1/4 teaspoon of Dill

Directions

1. Cook the stuffing by following the instructions on the box
2. Microwave the corn (and/or other veggies) for about 2 minutes
3. Shred chicken and add spices
4. Combine everything in a glass Pyrex cooking dish and gently pack down
5. Top with Pillsbury rolls
6. Put in oven until the rolls are golden brown (20-30 minutes – It’s okay if the bottom of the rolls are a bit doughy.)
Prep time 15 minutes
Total 45 minutes
Makes 6 servings

    • Thanks, Amanda..! I REALLY is…My son (who’s constantly on a diet) had 4 helpings!! I had a rather large portion and couldn’t go for seconds, but wished I could. It’s traditional Midwestern comfort food….Give it a try! :)
