Chocolate Chip Cookie Recipe: Thick N’ Chewy

This chocolate chip cookie madness that seems to have overtaken me has been so much fun. What could be better than trying out versions of what is truly the world’s most famous cookie?

I’ll tell you what’s better.

Not having to go on the treadmill daily simply to combat the fact that I am baking so many cookies.

Not having to wash so many pans and spoons and cups and counters.

The adoration I am getting over these cookies from friends and family alike is really wearing thin. ;)  They are in chocolate chip cookie heaven, especially my co-workers who received not one but two batches of chocolate chip cookies this weekend.

So. Yet another recipe born of my Chocolate Chip Cookie Madness. These were a thick and chewy version of the recipe, and to obtain that you need to cut the butter amount in half.

These were good and very kid friendly, thick and delicious, strong enough to hold together in children’s lunches and small enough that you don’t feel too guilty sending them to school for a treat.

Chocolate Chip Cookie Recipe: Thick N' Chewy
Thick and chewy chocolate chip cookies, perfect for school lunches.

Ingredients
  • 2¼ cups of all purpose flour
  • 1 tsp baking soda
  • ½ cup of butter
  • 1 tsp salt (if using unsalted butter)
  • 1 cup of packed brown sugar
  • ½ cup of granulated sugar
  • 1½ tsp vanilla
  • 2 eggs
  • 2 cups of semi-sweet chocolate chips
Instructions
  1. Kick the tires and light the fires to 350 degrees.
  2. Cream together your butter and sugar until it’s light and fluffy. Add in the eggs and vanilla, mixing thoroughly. Beat in the flour, baking soda and salt.
  3. When that is done, fold in the two cups of chocolate chips by hand, and prepare to put them on some parchment paper lined cookie sheets.
  4. Drop by rounded teaspoonful onto the baking sheets.
  5. Bake at 350 for 10-12 minutes, until golden brown and slightly underdone. Cool on the sheets completely.

You can see in the picture how they are thick and chunky compared to the cookies I have been baking lately. Keeping the oven at a lower temperature and making sure to slightly under bake them will give you fantastic results.

These are hands down the best chocolate chip cookies! Thank you so much for posting such an easy and tasty recipe. The only problem I find with these is you can't just eat only one or two..

Just tried this recipe. I moved to a new place and my old recipe wasn't seeming to work the way I wanted in the new oven.  This was great, perfectly dense and chewy, that is how my family likes chocolate chip cookies.

We have made these cookies so many times we know the recipe by heart. This is the best recipe I have come across for chocolate chip cookies. They always turn out thick and fluffy by following the directions perfectly and baking them at 350 degrees for 10 minutes. We have some in the oven right now!

Recipe fail. I made them twice and both times they are flat. The second time we quadruple checked every step and measurement. May be the altitude in Denver, but these are not thick in any way.

Just made them for a birthday gift: put in a large pickling jar with some ribbon.   She will love this recipe!  I cant help but admit there is one or three less cookies that are going to her.  Great recipe!!

Should the butter be melted or just brought to room temp before creaming with the sugar?

I cooked those few week ago for the family and husband loved them! Not the texture we're used to but was surprisingly good :)  I made a mistake of using olive oil cause I was out of butter. Don't. Seriously not good. To avoid in baking in general I'd say.  Anyway, I highly recomend these.

Ok, so am I to use 1/4 cup of butter for the thick and chewy version instead of the 1/2 cup in the ingredient list?

I just made 4 pans of these cookies.....I added mini chocolate chips and peanut butter chips.  What I love about these cookies is that they are soft & chewy.  My granddaughter is coming for the week-end, she is going to love these....THANKS so much for this receipe.....Peggy

I had to write a review for this recipe. It was absolutely outstanding. I've never made cookies at home before, I usually just buy them, but this recipe seemed simple enough to try. I can't wait to try this recipe.  I have tried for years to bake the "perfect" chocolate chip cookies.  Even my kids joke about my FAMOUS chocolate chip cookies because they're always a flop when I try to bake them.  I have baked and decorated many wedding cakes and my Welsh cookies are my family's favorite cookie.  I LOVE to bake.  The only recipe I cannot get right is the chocolate chip cookie...America's favorite.  My husband told me "Just give up already, every thing else you bake is great.  Why do you need to make the best chocolate chip cookies?"  I feel the need to make a perfect chocolate chip cookie or die trying.  I hope this recipe is what I've been searching for.

Just made these. They're really good but please change the order that the ingredients are in. 99.9% of recipes put the ingredients in the order that they're used. This one is not....it's really frustrating having to jump all over the place to see what comes next. Other than that I have no issues and will make these again!

Though these were good, they weren't great. They turned out soft, but reminded me more of a cookie that had gone soft from sitting on the countertop for too long, rather than as a gooey cookie straight from the oven. The problem may have been that I used only brown sugar since I didn't have granulated, so if I ever try these again, I'll be sure to use both types.
