This month’s Patak post really sums up what March is like for me:
March 2014 finds me running the Culinary Arts Cook Off while still trying to complete all my writing commitments to various companies AND run my website still AND complete a large side project as well.
Funny enough though, I still managed to “Mix In a Little India” during the month, which really tells me that I was right to partner with Patak’s for a year! I didn’t even do it on purpose, that’s the funny thing, because after March 15th I settled down and took a hard look at what else I had to catch up on.
When I looked, I realized that I had already whipped up a recipe this month, my Butter Chicken Spaghetti and even funnier still, it was on TV! I had to come up with a fast noodle dish that I could prepare on TV and because I am usually given a 4 minute segment, it has to be very easy to make, fast and presents nicely for TV. I grabbed a jar of Butter Chicken, did the prep on my vegetables and chicken breast and was ready to go the night before I had to be on Breakfast Television.

This month we were challenged to learn something new, such as henna, art, dancing, I attended an Indian themed party at a restaurant called Naanolicious here in Edmonton and experienced traditional dancing! We were all invited to take part and learn various Indian dances! It was so much fun, she was such an exceptional dancer and teacher and to be in the middle of a restaurant and see everyone dancing all through the tables was an incredible experience! The moves she taught were amazing and apparently is called Bharatnatyam, which is a classical dance from the state of Tamil Nadu.
It’s really funny to do just a video recipe and the lack of pictures weirds me out! You have to watch the video to see what it looks like LOL! I am going to write out the recipe for you as well below. Try it, it’s SO easy and fast to make!
Have fun “Mixing in a Little India!”
- 1 red pepper, washed & sliced
- ½ red onion, sliced
- 3 chicken breasts, cubed into bite sized pieces
- 1 tbsp oil
- 1 can Patak's Butter Chicken Sauce
- 1 (375 ml) package of Whole Wheat Pasta
- Prepare pasta according to package instructions.
- Fry the red pepper, onions and chicken breast in a large frying pan until the chicken is browned and cooked through/
- Add in the jar of sauce, stir in and simmer for another 3-4 minutes.
- Serve over the prepared spaghetti and enjoy!
